Ingredients
1 cup split yellow peas6 cloves of garlic3 cups water2 T fresh lemon juice1 T extra virgin olive oil2 T fresh chopped dill or parsley1/4 cup chopped scallionsSalt and pepper to taste
Directions
Cook peas and garlic in water. Bring to boil cover and simmer 30 minutes or until soft . Uncover and cook down to purree stirring often. Cover with cling wrap while cooling to prevent a skin. Blenderize add lemon and oil season with salt and peeper to taste. Stir in dill . Sprinkle scallions on top. Keeps 4 days cold or months frozen. Makes about 5 half cup servings. Use as a dip for vegetables or whole grain crackers
