Quinoa Hot Salad With Tomato and Onion

0.5 cup dry quinoa 1 cup cherry tomatoes 1 cup shallots (those extra extra small onions - can be substituted by normal onions, cut in halves) 0.5 cup Raisins Juice from 1 lemon 2 tbsp olive oil 1 clove garlic
Boil the quinoa for 15 minutes with 1 cup water
While the quinoa is boiling, put the shallots (or onions), garlic clove and tomatoes on the oven. They'll be roasted in about 15 minutes also.
Drain and rinse the quinoa, and spice it with the lemon and olive oil. Mix the tomatoes, garlic and shallots, and, if you like, wait until it is cold (I prefer it warm). Don't forget the salt, and finish it with the raisins.
The quinoa grows AMAZINGLY, so this SURE serves 3 people.
