3 cups mashed potatoes1 cup cooked mashed cauliflower1/2 cup cooked green beans mashedSalt 1 dash1tsp turmeric1 tsp cumin powder1/2 tsp chili powder (red, indian)Egg fresh and beaten lightly for breadingBread crumbs 1 and half cupflaxseed 1/2 cup mixed in with bread crumbCanola or veg oil 1/2 cup for shallow fryingCombine the potato, vegetables, salt and spices and mix well. Then take icecream scoop and use to get 1/2 scoop of mixture. form into ball, roll in egg and breadcrumb then saute in oil on medium temperature heat. remove from oil and place on paper to absorb excess oil. Eat with any entree or as a snack.
makes 12 - 14 servings. Each small potato patty is about 1 tblsp scoop of mixture formed into a ball or disc.
