Cinnamon Chicken Chili

2 boneless, skinless chicken breast2-3 cups low sodium chicken broth (how soupy you want it?)2 T Olive oil1 2" cinnamon stick1 c chopped onion1 c sweet potato, grated (or about 1 large)1 can black beans, rinsed and drained1 c crushed tomatoes1 T molasses1/2 tsp ginger, groundPepper to taste
Bring chicken broth with cinnamon stick to a boil medium pot, bring heat down to simmer and poach chicken 7mins or until cooked through. Remove and shred chicken, reserve poaching liquid. Next , soften onion in olive oil over medium heat. Add poaching liquid, sweet potato, tomatoes, black beans, molasses, and ginger. Add shredded chicken last. Bring to boil, then decrease heat and simmer for about 20minutes. Remove cinnamon stick, season with pepper to taste.
