3 Tbl olive oil2 chicken breasts, cut into 4 pieces1/2 bottle of red wine3 carrots, cut up in chunks1 large shallot, chopped1/2 tsp marjoram, thyme and rosemary3 bay leaves3 cloves of garlic, minced2 cups mushrooms, quartered1 cup low sodium chicken broth
Makes 4-6 servings
Flour the chicken pieces and brown all sides in 2 tbl cooking oil. Remove from pan.
Add additional oil and saute shallots, carrots, garlic and mushrooms until mushrooms have released their liquid. Add the wine and the chicken broth, bring to simmer. Add chicken and simmer for 25-30 minutes (until chicken is cooked through) Serve with brown rice or pasta
