Pico de gallo

Ingredients
6 roma tomatos, chopped1/2 purple onion, finely chopped1 clove garlic, minced1 jalapeno pepper, seeded and chopped4 tbls. cilantro, chopped1-2 tbls. lime jiucedash of salt
Directions
chop tomatos and onion; place in a mediun bowl. Mince garlic, seed and chop jalapeno; place this in the bowl with the tomatos. add chopped cilantro, freshly squeezed lime juice and a dash of salt. Toss gently and refrigerate at least 30 minutes to blend flavors.

Serve with tortilla chips, or as a condiment with any Mexican dish.

for variation you can add any combination of the following:
1 chopped avocado
1/4 cup corn
1/2 cup black beans
1 cup cooked seafood, chopped (scallops, shrimp and crab work great!)
