Spinach & Mushroom Quiche

Ingredients
5 Large Eggs4 Egg Whites1 Cup All Purpose Flour1 Tsp. Baking Powder2 1/2 C Non-Fat Milk1 Med Onion, Chopped1/2 Red Bell Pepper, Chopped6 Med Mushrooms, Sliced5 oz. Fresh Spinach1 1/4 C Reduced Fat Mexican Cheese Blend1 Tbls Olive OilSalt & Pepper
Directions
Preheat oven to 400 degrees. Lightly spray to pie tins. Saute onion & bell pepper in olive oil. Add mushrooms until soft. Add spinach until wilted.

Blend eggs, flour, baking powder and milk. Add vegetables and pour into pie tins. Top with cheese.

Bake for 30 minutes or until middle is done and sides and top are brown.
