Healthy Vegetarian Chili

4 oz chopped onion3/4 C Boca crumbles1 tbs chili powder2 tsp Chipotle Powder1 tbs garlic powder1/2 med green pepper diced14 oz canned organic diced tomatoes1 can kidney beans drained/ rinsedolive oil pam spraywater as needed
In a heated skillet spray pam spray, add Boca crumbles, chili powder, chipotle powder, and garlic powder, stir, add approx 2-3 oz water, and simmer 3-4 min. Set aside.
In large heated pot, spray pam spray, saute onions and green peppers until onions are translucent; add canned tomatoes and kidney beans, and water to thin. Simmer 5 minutes, add crumbles/chili mixture and simmer 30+ minutes
Serve with chopped onion or shredded lo-fat cheese or even with some cooked macaroni (for Cincinnati style) if calories allow.
