Ingredients
2 TBSP extra virgin olive oil2 TBSP cider vinegar1 tsp sugar1 tsp dijon mustard1/4 tsp salt1/8 tsp pepper6 cups baby spinach1 large red ripe tomato1 cup of seasoned croutons
Directions
In large bowl, with a wire whisk, mix oi, vinegar, sugar, mustard, salt, and pepper until well blended.

Add spinach, tomatoes, and croutons to dressing in bowl and toss to coat well, and Enjoy. Makes 8 servings.
