Hurst's Cajun 15 Bean Soup with Italian Sausage

Ingredients
1 bag-Cajun 15 Bean Soup1 can (14.5 oz) Del Monte Diced Tomatoes w/Basil, Garlic & Oregano-No Salt Added1/2 tsp. Season Salt1/2 tsp. Ground Black Pepper1 lb. Johnsonville All Natural Mild Italian Ground Sausage1-2 cloves garlic, mincedjuice of 1 lemon
Directions
FOLLOW COOKIN INSTRUCTIONS ON BAG-listed below-
Soaking: Place beans in a large pot, cover with 2 quarts of water. Allow beans to soak overnight, or at least 8 hrs.
1. After soaking, drain water, add 2 quarts of water
2. Bring beans to boil, reduce heat & simmer uncovered for 2.5 hrs.
3. In skillet, saute onion, garlic & sausage until sausage is browned.
4. Drain excess grease & add contents to beans along w/ tomatoes, lemon juice & cajun flavor packet (included w/beans). Simmer another 30 minutes.
5. Salt & Pepper to taste.
Yield: approximately 3 quarts. Serves 14-16-1 cup servings.
