Veggie Omlette

Ingredients
1/4 cup Egg Substiute (I like SW egg beaters)1/2 cup fresh aspargus1/2 cup fresh spinach1/4 cup fresh mushrooms
Directions
Pour egg substitute in hot pan and cook about 30 seconds.
Add veggies to center. Fold sides over. Cook until egg is done. Makes 1 serving.
"Note you may want to precook aspargus and mushrooms first depending on your taste."
