1/4 c. plus 2 T. butter1-1/2 c. sugar2 eggs2 very ripe bananas, mashed8 oz greek nonfat yogurt1 t. vanilla extract1 t. ground cinnamon1/4 t. salt1-1/2 t. baking soda1-1/2 c. white rice flour3/4 c. potato starch2-1/4 t. xantham gum1 c. chopped walnuts (optional)1 c. chocolate chips (optional)
Preheat oven to 300 degrees. Line muffin pans.
In a large bowl, cream butter and sugar. Mix in eggs, mashed bananas, yogurt, vanilla, and cinnamon. Mix in salt, baking soda, rice flour, potato starch, and xantham gum. Stir in nuts and chocolate chips. Divide into the prepared muffin cups.
Bake for 30-35 minutes large muffins-- until a toothpick inserted in center comes out clean.
This recipe makes 18 REALLY LARGE muffins. You could definitely reduce the size of the muffins and make them more diet-friendly.
