Miso Vegetable Udon Soup

1 T. vegetable oil (or other neutral oil)1/2 Onion, diced1/2 stalk Celery, diced3 Carrots, chopped1/3 container extra-firm Tofu1/4 cup Green beans1/8 cup frozen spinach3 cups Water1 cup Chicken broth3 tsp. Miso paste1/3 package (3 oz dry) Udon noodles
Cook noodles according to package instructions. When done, drain and rinse with cold water, and set aside.
Saute onions & celery in a small amount of oil over low heat. When soft, about 5 minutes, add carrots and saute another few minutes. Add tofu, saute for 1 minute, then add chicken broth and water. Add green beans & spinach. Turn up heat to bring to a boil, then reduce heat and simmer 10 minutes.
Mix miso paste with broth or water, then add gradually.
Add udon noodles, reheat them through, then serve.
