ED's Cheese Enciladas

Ingredients
6 Tortillas.5 cup cottage cheese, fat free.5 cup ricotta cheese, part skim milk2 tsbp diced green chilies1 cup shredded 4 mexican cheese.75 cup onion2 cups enchilada sauce3 tbsp sliced black olives
Directions
Serves 2, Serving size of 3 Enchiladas per serving

Soften tortillas in mcrowave (15 to 20 seconds) after dipping and coating each side in enchilada sauce.
Mix all ingredients except olives and spoon 1/4 cup into each tortilla and roll. Place each tortilla in dish that has been sprayed with non stick oil. Cover tortillas with remainig encilada sauce. Preheat oven to 350 and bake tfor 15 minutes. Remove from oven and spread black olives on top and continue to bake for 10 minutes. Serve over lettuce.
