Fried plantains and fried eggs

Plantains, 1 cup slices Canola Oil, 1 tbsp *Egg white, 1 serving Green Peppers (bell peppers), 1 tbsp Onions, raw, 1 tbsp chopped Salt, 1 dash
Deep fry plantains in oil. We assume that about a tablespoon of oil is absorbed in the plantain. Heat up about a teaspoon of oil in a skillet and carefully add onions to brown. Add dash of salt to taste. Add green peppers followed by the beaten egg white and let cook for a few minutes on one side. Carefully turn to the other side and brown to desired cooked state. Serve eggs with fried plantains.
