Chili Bean Burgers!

Ingredients

2 cups cooked pinto beans1 cup bread crumbs1/2 cup onion, chopped1/2 tsp Chili powder (or more to taste)1 tsp Salt3-4 Tbsp ketchup (nut. info w/ 3 Tbsp)1/2 cup Colby and Monterey Jack Cheese, shredded (different cheese can be added to your liking)
Makes 8 burger patties
**Pinto beans must already be cooked!**
Preheat oven to 400 degrees.
Spray large baking pan with 0 calorie cooking spray (can also coat with butter or oil but this is not figured into nut. info).
Mash or puree pinto beans. Place in a large mixing bowl; add all other ingredients and mix well.
Separate and flatten mixtures into 8 patties, each about 1/2 inch thick.
Place in pan. Bake patties for 10 minutes, turn, and bake for 10 more minutes.
Serve warm and enjoy!

I made this recipe tonight for my very picky hubby and 4 yr old daughter. I made them mini burgers on baked dinner rolls with a small slice cheese a dab of light mayo and dill pickle. Instead of chili powder i used kc masterpiece gourmet burger seasoning. My daughter liked it and my hubby ate 5 lol - 2/2/10

These are fabulous! I was browsing for bean recipes, and came across this one. These bean burgers are really easy to make and they don't fall apart when cooking. I added some crushed red pepper flakes for a spicy kick, and cooked them in a frying pan. Yum! Will definitely be making these again! - 12/23/10
