Italian Sausage ( turkey) and Eggplant Casserole

Ingredients
* Honeysuckle White Sweet Italian Sausage( 1 link), 3 serving (remove) * Eggplant, fresh, 1 eggplant, peeled (yield from 1-1/4 (remove) * Reduced Fat Parmesan Topping, 2 tbsp (remove) * Garlic, 2 clove (remove) * Onions, raw, 1 small (remove) * *Italian seasoning, 2 tsp (remove) * *Kraft Free Mozz. Cheese, .5 cup (remove) * Reggano traditional Pasta Sauce, 3 cup (remove)
Directions
diced onion and garlic and place in a small amount of water in a hot skillet, cook thoroughly until soft add 3 Sweet ( or Hot) Links without skin, add seasoning, cook thoroughly and add diced eggplant skinned, until soft then add to casserole pan and add sauce and Parmesan cheese. bake at 350 for 15 minutes, top at the end with mozzarella, Serves 6!
