Chicken Breast Stuffed w/Sun-dried tomatoes, pine nuts and spinach

Preheat oven to 400. Combine all the stuffing ingredients together in bowl and set aside. Place the chicken breasts on a cutting board and cover with plastic wrap. With a mallet, slightly flatten breasts. Shape a handful of stuffing into a ball and place in center of each breast. Wrap the chicken breast around the stuffing, starting with one side, and roll the breast, tucking the opposite side underneath. Season with Salt and pepper. Bake in preheated oven for 30-40 minutes
Makes three large servings...can be made with 4 oz half breasts and recalculate the calories.
