Sweet Scollop and Bok Choy Stir Fry

4 oz. Scallops1 c. Bok Choy chopped1 c. prepared brown rice2 tbs. Aji-Mirin1 Tbs. Tamari (Soy Sauce)1/2 tbs. sesame oilsprinkle of ginger1 crushed garlic clove.
Prepare Brown rice.
Meanwhile, chop and prep bok choy and crush garlic.
In two non-stick pans heat with cooking spray. Once hot add scallops (dried) in larger pan, and bok + garlic in another. Sear scallops and saute bok choy.
After about 2 minutes flip scallops, add half of sesame oil. Add 1 tbs. Mirin to the bok. Saute until wilted.
Add bok to scallops + rice, stir, add the rest of sesame oil, tamari, and the rest of Aji-Mirin. Saute until very hot and serve.
