Make Ahead Bran Muffins

Ingredients
Kellogg's All-Bran Cereal, 4 cupsShredded Wheat Spoon Size Cereal, 2 cupsWater, boiling, 2 cups Butter, salted, 1/2 cup Applesauce, unsweetened, 1/2 cupButtermilk, lowfat, 4 cups Egg substitute, liquid (Egg Beaters), 1 cupWhole Wheat Flour, 5 cups Raw Granulated Sugar, 1.5 cups Baking Powder, 3 tsp Baking Soda, 3 tsp cinnamon, 3 tspnutmeg, 3 tspApples, fresh, 2 cups, choppedCarrots, raw, 2 cup, chopped Walnuts, 1 cup, chopped
Directions
Combine cereals, add boiling water and butter. Cover until butter melts and water is absorded in cereal. Add applesauce, buttermilk and eggs and mix well. Combine flour, sugar, baking powder, baking soda, spices and add all at once to cereal mixture, stirring just until moistened. Stir in apples, carrots, walnuts. Bake at 400 degrees for approx. 23-28 minutes.
Makes 13 1/2 cupes batter which yields 54 muffins (regular sized) or approx. 40 muffin tops. Can store in refrigerator for up to 4 weeks or freeze in batches.
