Lunch "Nachos"

Ingredients
1 cup black beans1 Avocado0.5 cup Shredded Mexican CheeseMix4 tbsp Salsa4 Medium size corn tortillas
Directions
Whip beans with mixer, put aside
Whip , with mixer
Spread beans and avocado evenly on tortillas
Add cheese
Add salsa
Bake until cheese is melted, everything is warm, and tortialls have crisped

To reduce fat, reduce the amount of avocado and/or substiture low fat cheese.

I like a spicy salsa for a nice kick.

Use mini-tortillas for appetizers.
