Ingredients
3 cups prepared brown rice1 lb beef tip round cut into bite size pieces2 TB vegetable oilsalt and pepper to taste1 large onion sliced into strips3 large tomatoes sliced into strips1 jalapeno pepper1/4 cup distilled white vinegar1 tsp soy sauce1TB dried parsley
Directions
1. Prepare the rice according to package instructions.
2. While the rice is cooking, heat oil in a frying pan over medium-high heat. Season the meat with salt and pepper. Fry the meat until just cooked, and the juices begin to release. Remove the meat from the pan, then cook the onion until they are transparent. Stir in the tomatoes and jalapeno pepper; cook until the tomato softens. Return meat to pan and pour in vinegar, soy sauce and rice. Cover and cook until beef is done, about 3 minutes. Season to taste with salt and pepper and sprinkle with parsley to serve.
