GF pancakes

Ingredients
1 cup GF flour blend2 tsp GF baking powder1 tsp salt1 cup milk (I use vanilla soy milk - pancakes taste better than with dairy milk)1 egg (or you can use 1 tsp Egg Replacer and 2 tbsp water)1 tbsp oil
Directions
Mix dry ingredients in med bowl. Beat wet ingredients in small bowl. Stir wet ingredients into dry ingredients until just blended (some lumps are okay). Let sit for five mins and then ladle onto a hot griddle and enjoy!
