Baked Barley

Ingredients
6 cups chicken broth2 cups barley (or farro)1 cup swiss cheese, shredded2 1/2 cups parmesean, shredded3/4 cup provalone, shredded2 cups whole milk4 Tbsp butter1/4 cup flour1 Tbsp thyme3 Tbsp butter1 cup panko breadcrumbs5 slices bacon, cooked and crumbled
Directions
Boil chicken broth and add barley. Steam for 30 minutes. Cool. Preheat oven to 400. Heat milk in microwave. Melt butter in large sauce pan and whisk in flour. whisk in milk, stirring for 8 minutes until it makes a nice thick sauce. Pour over barley, and stir in cheeses and thyme. Pour into baking dish. Melt 3 Tbsp butter and add panko and bacon. Sprinkle over top of barley and bake for 25 minutes until golden.
