Slow Cooker Pot Roast - Dressy Edition

Ingredients
3-5 lbs chuck roast1 large onion, chunked1 lb baby carrots2 lbs potatoes, cubed, or mini new potatoes. If you're using a non-waxy potato, add them with 1-1.5 hrs time remaining. Waxy potatoes can be cooked entire time.12 oz mushrooms1 28 oz can diced tomatoes1 cup red wine (we normally use merlot)1 can beef broth1 tbsp chopped garlic1 tbsp italian seasoning or basilsalt & pepper
Directions
Add all ingredients to the slow cooker and cook on low until done. This takes most of the day, so it's a good one to start in the morning and come home to after work.
