Veg Soup with hamburger, beans, and sweet potato

Beef Bullion - enough to make 6 cups (6 cubes)8 cups Water (more or less depending on how thick/thin you want the soup)1/2 cup chopped onion2 Carrots, peeled and sliced2 stalks Celery, sliced1 cup Cauliflower1 cup Broccoli, chopped1 small Zucchini, sliced into rounds or half-rounds1/2 cup Peas, frozen1/2 cup Corn, Frozen1 cup Spinach, fresh, chopped (more or less, it cooks down quite a bit - add more for increased folate and fiber)1/2 cup Green Beans, fresh1/3 cup sliced mushrooms1/3 CAN of Kidney beans (I freeze the rest to add to soup another day)1/3 CAN of Chickpeas (garbanzo beans)2 CANS Ready Cut Diced Tomato 1 tbsp Italian seasoning * Ground beef, lean, 3 oz (remove) * Sweet potato, 1 cup, cubes (remove)
saute onions, carrots and celery till crisp tender. Add water and bullion, all vegetables and seasoning. Bring to a boil. Simmer till veggies are tender, about 30 minutes.
