Molasses Sugar Cookies

Ingredients
3/4 C. Pureed White Beans1 C. Packed Brown Sugar1 Egg1/4 C. Blackstrap Molasses1 C. Whole Wheat Flour1 C. Unbleached White Flour1/4 teas. Salt2 teas. Baking Soda1 teas. Ground Cinnamon1 teas. Ground Cloves1 teas. Ground Ginger
Directions
1. Cream together the pureed beans and brown sugar. Add egg and molasses, and beat well. Add dry ingredients, and mix well.
2. Chill dough at least 1 hour or overnight.
3. Preheat oven to 375 degrees F. (190 degrees C.)
4. Roll dough into 1-inch balls, dip tops into sugar. Place balls 2 inches apart on cookie sheet covered with Release aluminum foil. Bake for 10 minutes. Cool slightly before removing from pan. Let cool an a cool countertop rather than a rack for best results.
