Ingredients
1 cup bulgur wheat 4 cups water1 cup finely chopped parsley1/3 cup finely chopped scallions3 red ripe tomatoes, cut up1 medium cucmber, chopped1/3 cup cilantroDressing:1/2 cup fresh lemon juice1/4 cup olive oil1/2 t. garlic saltsm. amt. freshly ground pepper1 tsp. dried dill weed (or 1 T. fresh dill)
Directions
Soak bulgur in water until soft; drain well.
Chop all vegetables finely; stir into bulgur.
Combine dressing ingredients; pour over salad and mix well. Chill.

Serve on lettuce leaf or in pita bread.
Add Kalamata olives and/or feta cheese if desired.

Makes 8 1-cup servings.

    This is incredible! I soaked the bulgur in a non-stick pan and then returned it to heat to evaporate the remaining water. I added some red pepper, celery for more crunch. Delicious. - 8/12/08
