Ingredients
Directions
1 can corn, drained1 can creamed corn2 boxes jiffy cornbread mix8 oz shredded cheese (I prefer Mexican blend)1 lb hamburger1 onion, chopped
Brown hamburger. Mix cornbread according to box directions (I don't use a mix, I make mine from another recipe). Add drained and creamed corn and mix well. Add 1/2 cheese, onion, and hamburger. Pour into greased 8X8 dish. Sprinkle remaining cheese on top. Bake at 350F for 30 minutes.
I like to add taco seasoning to the hamburger to spice it up a little. I also double the batch, adding jalapenos to one batch.
1 batch makes 8 small servings
