Jicama slaw

Ingredients
1 medium jicama shredded2 cups cole slaw1 can (11 oz) mandarin orange segments. 1/4 c up juice reserved1/4 cup light mayonnaise3 tablespoons apple cidar vinegar1/4 teaspoon fajita seasoning1/2 teaspoon salt1/4 teaspoonful pepper
Directions
Use a grater to shred 2 cups of jicama into a large bowl. Add cole slaw & mandarin orange segments; set aside.

In a small bowl, whisk together reserved mandarin juice, mayonnaise, vinegar, fajita seasoning, salt, and pepper.

Pour dressing over jicama mixture. Toss to mix thoroughly.
