Hearty Vegetable and Pasta Soup

Ingredients
1 turn extra virgin olive oil1 medium onion, diced2 carrots, chopped1 stalk of celery, chopped1 can of diced tomatoes3 cups chicken broth (low sodium & FF) or 3 cups water (stats here with water! - **ADD 7 cals and 450mg sodium per serving if using broth)1 tsp BasilSalt and Pepper to likings.33 cup (~2oz dry) bow tie pasta (smaller is better).25 cup spinach, chopped and stems removed
Directions
Add a small amount of vegetable oil (one turn of the pot) and the onion to a stock pot (or dutch oven). Cook until translucent, about 5 minutes. Add carrots, celery, tomatoes (undrained), chicken broth (or water), basil, salt and pepper. Bring to a boil and then simmer uncovered on med/low for 30 minutes or until carrots and potatoes are cooked through. Add uncooked pasta to pot and cook uncovered 10 minutes until pasta is done. Add the chopped spinach to the pot and continue to simmer for 2 minutes until spinach is wilted. Serve immediately and ENJOY the tons of flavor!
