Grilled veggie & goat cheese Hoagie

Ingredients
4 hoagie rolls, preferably one with a good whole grain2 TBLS Olive oilsalt and pepper to taste3 cloves garlic, put through a garlic press so it is crushed into very small pieces(Each of the veggies below sliced lengthwise into 1/2 inch thick)1 large eggplant1 or 2 yellow squash1 or 2 zucchini squash( you will grill the above veggies)1 large onion sliced1 large tomato slicedRed leaf lettuce, 4 large leaves4 ounces of lowfat plain yogurt2 ounces of goat cheese (can also use feta cheese)1 TBLS of parmesean cheese
Directions
Prepare your grill. Mix olive oil and garlic in a bowl together and let sit while you slice all the veggies. use a silicone pastry brush and brush each veggie with the olive oil mixture and then sprinkle with salt and pepper. Grill over coals for about 3 minutes each side, until tender with grill marks. Meanwhile mix yogurt, goat cheese and parmesean cheese together and spread over toasted hoagie roll. Layer each hoagie roll with the grilled veggies and top with teh onion, tomato and lettuce. Serve with my spicy sweet potato fries that is also listed in the recipe section. Enjoy! (the restaurant that I had this at served with a black bean soup that is also very good....trying to perfect that one still)
