Ingredients
PLACE GINGER (TWO THUMB PIECE), GARLIC, HABANERO AND 1/2 LIME JUICE IN A SMALL CHOPPER. THEN SAUTE FOR FEW SECONDS IN OLIVE OIL. ADD BROTH AND SIMMER 5 MINUTES. ADD IN JICAMA, CARROTS AND 1/2 LIME JUICE AND SIMMER UNTIL CRISPY TENDER. THEN ADD BELL PEPPER AND CUCUMBERS. I ALSO ADD COOKED EDAMAME BEANS IF I HAVE THEM HANDY. LAST ADD CHOPPED CILANTRO ON TOP AND SERVE.
