Broccoli Rice Chicken Casserole

10 oz. Frozen Broccolii Florets3 cans Campbells Reduced Sodium Cream of Mushroom Soup2 cups shredded mild cheaddar cheese (low fat)1-lb package (before cooking) chicken breast tenderloins1/3 small onion chopped coarsely (optional)3 - cups prepared Minute Whole Grain Brown Rice1 - 4oz can of mushroom pieces and stems (optional)
Cook Broccoli according to package directions.
Cook rice according to package directions.
Cook chicken in fry pan using lowcal/lowfat cooking spray. (I used canola oil spray).
Mix all cooked inredients, onion, soup, and 1.5 cups of cheese into large casserole dish or pan. Cover with remaining cheese.
Cover and cook in 350 degree oven for 30 minutes.
Makes 16 1 cup servings
