Black Bean Burgers

Ingredients
15 oz. canned black beans, drained and rinsed1 Tbsp. tomato paste1/2 cup red onion, very finely chopped or minced1 cup plain bread crumbs (split in half)1 Tbsp. balsamic vinegar1 egg, lightly beaten3 Tbsp. olive oil
Directions
Mash beans in a large bowl with a fork. Add all remaining ingredients except oil and 1/2 of the bread crumbs. Mix & mash together well. Form with hands into 4 patties.

Place the remaining 1/2 cup bread crumbs in a shallow bowl or plate. Dip each patty in & rotate to coat on all sides.

In a heavy skillet (I like cast iron!), heat the oil over medium heat. Fry the patties for 2 to 3 minutes on each side, until they are browned, then remove to drain on paper towel.

Serve on toasted wheat hamburger buns with toppings of your choice!
