Mel's Balsamic Roasted Squash

2 acorn squash (about 2 cups cubed)2 tbsp honey3 tbsp balsamic vinegar.5 tbsp Smart Balance Buttery SpreadPinch of SaltPepper to taste
Slice and seed the acorn squash. Cut each squash into quarters. Mix honey, butter spread, and balsamic vinegar together and pour into glass baking dish. Place slice squash in so that the flesh is in the sauce. Sprinkle with salt and pepper. Roast for 20 minutes at 450 degrees. Flip and roast for an additional 20 minutes or until cooked through.
