Curried Tuna Salad Club

Ingredients
1 can (6oz) of chunk white tuna in water2 tbsp finely chopped sweet vadalia onion1 stalk celery, minced1/4 cup reduced fat mayonnaise1/2 tsp curry powder3 slices whole- grain bread, toasted2 lettuce leaves4 large tomato slices
Directions
In a bowl, mix tuna with onion, celery, mayonnaise, and curry powder. Spread half of the mixture on a slice of toasted bread and place another piece of bread on top of that, then spread some mixture on the 2nd bread (save the remaining tuna for another sandwich.) top with lettuce and tomato, place 3rd slice on top of the other. Cut the sandwich into fourths on the diagonal and serve.
