Ingredients
1 med ium carrot chopped (1/4 cup)2 stalks celery chopped (1 cup)1 red pepper chopped (1 cup)3-5 scallions chopped (2-3 T)3 small potatoes, peeled & chopped (2 cups)2 cans minced or chopped clams2 bottles clam broth (8oz each)1 can diced tomatoes (14.5 oz)1/8t black pepper1/8t cayennered pepper flakes (opt)1/2t basil
Directions
Put celery, carrots, scallions, red pepper in stock pot with juice from canned clams & 1 bottle clam broth
Simmer 10 minutes
Add potatoes, canned tomatoes, broth, spices
Simmer 10-12 minutes
Add canned clams
Simmer 2 mins

Makes 6 dinner size servings (approx 1.5-2 cups/serving)
