Curry Lamb Stew

Ingredients
1 lb boneless leg of lamb, diced1 can Fire Roasted Diced Tomatoes w/juice1 cup pure pumpkin4 1/2 cups cauliflower (1/2 large head)2 tsp garam masala2 tsp ground coriander2 1/2 cups chopped red onion (1 large)1 tbsp olive oil1 tbsp minced garlic1 can low sodium (or rinse) kidney beans (1 1/2 cups)2 tbsp Patak's Spicy Ginger and Garlic marinade (may substitute any ginger garlic paste)4 cups water
Directions
Heat up olive oil in stock pan. Add onions and lamb - saute for 5-10 minutes. Add garlic and spices. Simmer for another 5 minutes. Add rest of ingredients and half the water. Let simmer,, stirring periodically. Cook until lamb is tender. Add additional water as needed. I simmered mine for 2 hours.
