Southwestern Style 3 Bean Salad

Ingredients
1 15-oz can black beans (rinsed well)1 15-oz can chick peas (rinsed well)1 15-oz can blackeye peas (rinsed well)1 medium onion, chopped1 bunch cilantro, chopped2 tsp paprika1/2 tsp. cuminsalt and pepper to tastejuice from 1 lime (~ 1/4 cup)2 cloves of garlic
Directions
In hot pan (sprayed with no-cal cooking oil), add onions, garlic, paprika, cumin, salt, pepper. Saute until onions are translucent. Toss in refridgerator bowl with beans and cilantro. Chill. Serve as salad.

Makes 14 1/2-cup servings.
