Cauliflower Curry

Ingredients
1 large head cauliflower, cut into small pieces1 onion, chopped1 large clove garlic1 tbsp curry powder1 tsp red pepper powder, pepper sauce, or 1 tbsp chopped hot pepper2 tbsp olive oilsalt and pepper1 can coconut milk1 can diced tomatoes
Directions
Heal olive oil in skillet and add onion, garlic, curry, and hot pepper. Cook a minute or two to bring out the flavors. Add the cauliflower and stir to coat with seasonings.
Pour in the coconut milk and tomatoes. Season with salt and pepper and simmer til cauliflower is tender.
May be served over rice.
