Ferns chicken and rice

Ingredients
onion, one medium choppedone clove garlic, choppedone can diced tomatoes, undrained14.5 oz.3/4 cup brown rice, uncooked1-1/4 cup water1 roasted chicken from deli, boned and skinedsalt and pepper to taste
Directions
Spray large skillet with Pam olive oil.
Sauté onions and garlic until onions are clear.
Add rice, tomatoes water and saffron.
Reduce heat and simmer until rice is cooked, stirring occasionally (add water if needed).
stir in chicken and serve.
Makes approxamately 6 one cup servings
