Mushroom and Walnut Pâté

Ingredients
- 1 teaspoon olive oil- 1 clove garlic, diced or crushed- a twig of fresh rosemary- 4 large-sized button or Baby Bella mushrooms (Baby Bellas will have a meatier taste. Aim for mushrooms with approximately a 2" diameter), sliced- 1 tablespoon chopped walnuts- 1 tablespoon shredded or grated parmesan cheese- salt and pepper to taste (this is not included in nutritional information so that people tracking sodium can add their own measured salt)
Directions
In a small saucepan over medium heat, sautee the garlic in the olive oil until it just begins to turn brown around the edges. Add the rosemary (just the leaves, not the twig they're on!), the sliced mushrooms, and the walnuts. If there doesn't seem to be enough liquid in the pan, add just a little water- less than a teaspoon.

Cook for 5 minutes, stirring constantly, or until the mushrooms are cooked through. Remove from heat and add the parmesan, stirring it into the mixture.

Put the mixture into a food processor (even the cheap 2-cup tabletop choppers will do! That's what I use) and process until it becomes a fairly smooth paste. Enjoy!
