Split Pea Soup w/ Jenny o Turkey Ham

1/2 onion, diced½ tsp. Thyme2 cloves of garlic, minced4 carrots, diced – med4 stalks of celery, diced - med1 russet potato, peeled and diced Jenny O Turkey Ham 2 lb piece6 cups of Water1 cup chicken stock or vegetable stock1 1lb bag of dried split peas (rinsed)1 bay leaf Salt and pepper to taste
Put Split Peas, bay leaf, onion and water into cooking pot. Bring to a boil. Boil for 10 min. Remove from heat. Let stand 1 hr.
Add Thyme, garlic and ham to the pot. Salt and pepper to taste. Cook over medium low heat for 1 1/2 hours.
Add the carrots, celery and potatoes then cook for an additional 30-45 minutes or until the vegetables are tender. Remove bay leaf. If you want it to be a bit thicker, mix with an immersion blender for a few seconds. Enjoy.
