Orange Cranberry Pecan Muffins

1/4 tsp cardamom1 tablespoon orange zest1/3 cup chopped pecans1/3 cup chopped dried cranberries1 cup whole wheat flour1 cup all purpose flour3 tsp baking powder1/2 tsp salt1/2 packed brown sugar1 egg1 cup skim milk1/4 cup applesauce
Grease mini muffin pan. Preheat oven to 425 degrees.
Combine all dry ingredients in large bowl, make well in the middle and add whisked egg, 1 cup milk, and applesauce all at once and stir till just combined. Pour 1 tablespoon of batter into each mini muffin.
Place pan on oven and reduce temperature to 400 degrees. Cook for 10 minutes.
