1.25 cup(10 oz.) cranberry-orange relish4 cups flour6 large eggs3/4 cup granulated sugar3/4 cup brown sugar2 sticks butter2 tsp baking powder1 tsp salt1.5 tsp nutmeg1.5 tsp cinnamon4 tsp vanilla1 cup walnuts chopped(optional)
Sift flour baking powder, sugars, salt and spices. Set aside. Beat eggs. Melt butter add to dry mix. add relish, mix well pour into 2 sprayed or greased loaf pans. Bake at 350 for 75 mis or until inserted kife comes out clean. Let cool 10-15 minutes before removing from loaf pans. Each loaf shouls yield 16 servings

Not sure how to rate this one, was looking for a recipe to use leftover cranberry relish, thought this looked perfect. Until I realized in the middle of making this that there is no liquid of any kind, no milk or orange juice. It was too thick to mix, so I added 1/2 c. orange juice and 1/2 c. milk - 12/8/12
