Homemade dark chocolate pudding

Ingredients
3/4 c. Sugar1/2 c. Cocoa powder3 T cornstarch1 1/2 c. Coffee Rich1 1/2 c. Water1/2 c.egg beaters1T. Earth balance buttery sticks1t. Vanilla
Directions
Mix first 5 ingredients in heavy sauce pan. Cook and stir till thick and bubbly. Add 1 cup mixture slowly to egg beaters while mixing . Stir back into saucepan. Cook and stir two minutes more. Add buttery stick and vanilla. Stir and serve. Make 8 half cup servings.
