Apricot Pork Chops

16 oz lean pork loin chops4 tbsp apricot preserves1/2 cup panko breadcrumbs2 tsp black pepper1 tsp salt
Preheat oven to 425.
Spray baking pan with non-stick cooking spray. Sprinkle pork chops with salt and pepper. On separate plate, spread the panko bread crumbs. Place 1 tbsp of apricot preserves on each pork chop. Place the pork chop, apricot side up, on the plate of bread crumbs and cover the top with panko (apricot side, bottom gets a light coating by resting on the plate).
Bake for about 20 minutes, or until pork appears done.
Makes 4 4 oz servings.
