Pumpkin Spinach Curry

Ingredients
1/2 cup of canned pumpkin1/4 cup low sodium vegetable broth 1/2 cup canned spinach1 plum tomatoes, diced1 tsp curry powder1/2 tsp ground cumin
Directions
Microwave diced tomato with garlic for 5 minutes. Add pumpkin, spinach, broth, spices and microwave for another 3-4 minutes or until heated through.

Can be enjoyed with tofu, chicken or shrimp.

Serves 1.
