Spinach Casserole

Ingredients
Spinach, frozen, 1 package (10 oz) yields, thawed & drained well Onions, raw, 1 cup, chopped , cooked in 1Tbs olive oil till tender.1 c. Cottage Cheese Egg, fresh, 3 large*Pork Sausage, 3 patty, cooked & broken into pieces. Hormel REAL crumb. Bacon 50% less FAT(original)2Tbsp.Pepper, black, 1 dash Salt, 1 dash Garlic, 1 clove crushedGreen Giant Mushrooms 'pieces & stems', 1 cn Red Ripe Tomatoes, .25 cup, chopped or sliced Baker & Chefs part skim Mozzarella, 1 (120z) pkg., reserve 1/4 c. for topping.
Directions
Prepare spinach according to directions on pkg. Saute onions if using raw, whisk eggs,cottage ch.,mozarella,cooked sausage & bacon,mushrooms,seasonings together till well combined.
Spray shallow baking dish with Pam. Pour ingredients into dish, sprinkle with tomatos. Bake 45 min. or till center is 'firm', at 350*. Remove & sprinkle with remaining cheese & replace into oven till nicely browned (may require Broiler setting).
